Makes 50
2 tablespoons oil
½ cup popping corn
170 g (6 oz/ ¾ cup) caster sugar
80 g (2¾ oz) unsalted butter
2 tablespoons honey
2 tablespoons cream
½ cup popping corn
170 g (6 oz/ ¾ cup) caster sugar
80 g (2¾ oz) unsalted butter
2 tablespoons honey
2 tablespoons cream
Method:
1. Heat the oil in a large saucepan over medium heat. Add the corn and cover with lid. Cook for 5 minutes or until the popping stops, shaking the pan occasionally. Tip the popcorn into a big bowl.
2. Put the sugar, butter, honey and cream in a small saucepan. Stir over medium heat, without boiling, until the sugar has completely dissolved. Bring to the boil and boil, without stirring, for 5 minutes.
3. Pour the caramel over the popcorn and mix together. Leave to cool a little, then rub some oil over your hands and mould the popcorn into small balls. Put on a wire rack to set.
3. Pour the caramel over the popcorn and mix together. Leave to cool a little, then rub some oil over your hands and mould the popcorn into small balls. Put on a wire rack to set.
Note: When you pour the caramel over the popcorn, mix it together before it goes hard. Don’t wait; you need to mix it as soon as you pour it over the popcorn. Then once you’ve mixed it, leave it for around 3 minutes and then make the balls.
